Country Recipes
Hi, these are some of the country recipes that I have come across while living my country life, natural foods or fresh local foods are my main ingredients.
My slow-cooker beef stew ( basically any meat will work for this, many times I substitute the beef with game meat, using moose is my favorite )
Trim the fat from 2lbs (1kg) stewing beef cubes. Cut beef into 1-inch (2cm) chunks; toss with 3 tbsp. (50ml) all-purpose flower.*In large nonstick skillet, heat 1 tbsp (15ml) vegetable oil over medium-high heat; brown meat, in batches. Transfer to 18- to 24 cup (4.5-6L) slow-cooker.*Return skillet to heat. Add 1/2 cup (125ml) water and boil, scraping up any brown bits; add to cooker.*Add 3 slices bacon, chopped; 2 each onions and stalks celery, chopped; 3 sweet potatoes, peeled and qubed; 4 garlic cloves 3 cups (750ml) beef stock; 1 tsp (5ml) dried thyme; 3/4 tsp (4ml) each salt and pepper; 1/2 tsp (2ml) ground allspice*Stir well to combine, cover and cook on Low for 8 to 10 hours ( or high for 4 to 6 hours) or until meat and vegetables are tender.*Whisk together 1/3 cup (75ml) each all-purpose flour and water; add to cooker along with: 1 each sweet red and green peper, chopped; 1 tbsp (15ml) wine vinegar; 1 tsp (5ml) hot pepper sauce*Cook, covered, on High for 20 minutes. Discard any bay leaves. Makes 8 to 10 servings. ( unless your feeding my dog; he loves this stew )
My country style Bannock ( there are many variations, this is mine )
I haven't tried to many variations, and most were quite acceptable but extremely heavy and bland. This one is a basic light variation that can be madeinto everything from pancakes to fish coating. Like all bannock recipes there is always room for personal touches.
1 1/4 cups all-purpose flour 3 tsp baking powder 1/4 tsp salt 1 Tbsp sugar 3 Tbsp Lard (oil will make it heavy) 1 egg (optional) Add raisins, banana chips, dried apple, fresh berries ( optional )
*Combine flour, baking powder, salt and sugar in clean bowl, add Lard. Rub to form fine crumbs, if using egg, combine with water, add to flour mixture.Stir to form soft dough. knead until smooth, about 10 seconds.
*Bake 30 minutes in a lightly greased heavy skillet, dusted with flour or deep fry until brown.
A sweet variation; Roll dough out until 1/4 inch thick. Mix brown sugar, butter, cinnamon, and nutmeg. Spread evenly on dough. Roll dough back up, slice 1 inch thick;Place on frying pan or cookie sheet bake or fry until brown on both sides.
